Who are they?
Parés Baltà's origins go back to 1790, when the first vines were planted on the family's properties in the Penedès. Today based in Pacs del Penedès, near Barcelona, the domaine remains family-run and works several vineyards across the region. The parcels have been certified organic since 2002 and farmed according to biodynamic principles since 2012. Parés Baltà produces still wines and several Cavas, giving important emphasis to the Penedès's traditional varieties such as Xarel·lo, Macabeu and Parellada.

The traditional method
The Cavas are made with a second fermentation in bottle. The domaine controls the entire process, from the vine through to the production of its sparkling wines.

Because Parés Baltà makes it possible to discover Cava through a domaine deeply rooted in the Penedès and its traditional grape varieties. Its Cava Brut is a great place to start: approachable, dry and made by the traditional method — a reminder that this technique isn't exclusive to Champagne.
